Essentials of Food Hygiene
This advice may not all be relevant to every business
- Always wash your hands thoroughly before handling food, after using the toilet, handling raw foods or waste, before starting work, after every break and after blowing your nose or sneezing.

- Keep yourself clean and wear clean clothing.
- Keep the preparation of raw and cooked food strictly separate.
- Keep perishable food either refrigerated or piping hot.
- Keep all equipment and surfaces clean and clean up as you go.
- Avoid unnecessary handling of food.
- Ensure reheated food is piping hot.
- Always follow food safety instructions on food packaging or from a supervisor.
- Always cover cuts and sores with waterproof, high visibility dressings.
- Advise a supervisor before you commence work if you have any skin, nose, throat, stomach or bowel trouble or if you have an infected wound. You will be breaking the law if you fail to do so.
- Do not smoke, eat or drink in a room with food, and never cough or sneeze over food.
- Do not prepare food too far in advance of service.
If you see something wrong - tell a supervisor.
